Vinifikation

Manuelle Auswahl der Trauben. Schwerkraftförderung der Ernte in einen 50 bis 100 hl Tank, wo die Gärung mit einheimischen Hefen stattfindet. Gärung und Maischestandzeit von 15 Tagen. Malolaktische Gärung im Tank.

Lese

The beginning of winter was cold and harsh, especially in January, when storm 'Filomena' hit the country with heavy snowfall and temperatures close to -12°C. These cold spells had little effect on the vineyards, which were in vegetative dormancy at the time, although some dormant buds froze, but the snow cover allowed a good water reserve to accumulate in the subsoil. These cold spells also caused a delay in the budding date of the vineyard, with spring passing with good weather, which resulted in excellent vegetation and flowering of the vineyard, with a good showing of small flower clusters. The beginning of summer was irregular, alternating cold and heat, followed by a notable drought and a significant heatwave towards the end of August, which dried out some ripening clusters, somewhat reducing the harvest. Thanks to the important winter water reserves accumulated deep in the soil, our vineyards hardly suffered these extreme conditions, ripening the grapes in excellent conditions, with a shorter harvest than normal due to the winter cold and summer heat, obtaining a fruit of excellent quality, due to its aromatic concentration and polyphenolic richness in the grapes.
